Nikki Jupe has worked within the University of Oregon Athletic department since 2016 as a Sports Dietitian. During her time at University of Oregon she has overseen a variety of sports and administrative duties but now directly oversees the Sports Nutrition department and direct fueling for Oregon Men’s Basketball, Men and Women’s Track and Field, and Men and Women’s Tennis. Nikki has been a part of the Men’s basketball team for the past four years fueling several teams to PAC 12 championships, Final Four, and Sweet 16. She has also fueled Women’s basketball to Elite Eight, Final Four and potentially a National Championship and lastly, has fueled Women’s track and field during the 2016-2017 Triple Crown year and multiple individual National Champions, and three Men’s PAC 12 Championships. Nikki joined Oregon in August of 2016 from Baylor University, where she served as Sports Nutrition Coordinator. During her time at Baylor University, Nikki served as a Registered Dietitian aiding Men’s and Women’s Basketball, Volleyball, Tennis and Track and Field. She also oversaw inventory management, ordering, and operational services alongside the Director of Sports Nutrition. Prior to her time at Baylor University, Nikki served as a Registered Dietitian at Texas A&M University, aiding in football and Olympic sports nutrition. Her role involved fueling station management, nutrition education and medical nutrition therapy. She also worked at the local hospital, College Station Medical Center, as a Clinical Registered Dietitian. In this role, her responsibilities were medical nutrition therapy for the intensive care unit, diabetes management and heart healthy education.
Nikki earned her MS in Food, Nutrition, & Dietetics and MS in Kinesiology along with a BS in Food, Nutrition & Dietetics from Stephen F. Austin State University. Nikki is a Registered Dietitian, Licensed Dietitian in Oregon, Board Certified Specialist in Sports Dietetics, and certified through the International Olympic Committee Diploma in Sports Nutrition.
